Monk fruit is carefully harvested at peak ripeness from the misty mountains of southern China.

The fruit is crushed and infused with water to extract its naturally sweet compounds, called mogrosides.

The extract is gently filtered and concentrated to remove unwanted plant material while preserving its natural sweetness.

The purified extract is dried into a fine, concentrated powder.

Monk fruit extract may be blended with natural sweeteners such as erythritol or allulose to provide the texture and spoon-for-spoon sweetness of regular sugar.
